Paprika peppers drying in the sun at market.
Hungary is famous for its paprika, which is made from dried peppers. This 'red gold' is the heart and soul of traditional Hungarian cuisine. Paprika arrived in Europe from the New World with Christopher Columbus. Originating in central Mexico it was brought to Spain in the 16th century. In the 18th century, the word paprika came from a diminutive form for the name of pepper (papar). Hungary is a major source of commonly used paprika. Hungarian paprika is often specified in recipes, because it is unique. It is bright red and said to be sweeter than paprika grown in other soils and climates. Albert Szent-Györgyi, a Hungarian native, won the Nobel Prize in Physiology or Medicine in 1937 for his discoveries in connection with biological combustion processes. In the process of looking for a supply of Vitamin C for his research, he discovered that Vitamin C was abundant in paprika.
